The Mother of ALL Marinades...

I love BBQs. There's something about roasted meat (ok meat in general) that I simply cannot resist. And ok, I know that this works best for an oven, but if you cook this at any party, it'll fill your house with such a delicious smell...

This is one of my favourite marinade recipes. It's spicy, it's sweet, and it has a delicious, smokey flavour that I can't resist. The recipe below will make enough marinade to coat 2kg of meat. However, the more surface area you need to cover (i.e. smaller pieces of meat like cubes for a kebab or chicken wings), the less the batch will stretch. And also keep in mind, the meat will release it's own juices while marinating, almost doubling the marinade volume.

Anyway no hard and fast rules. If you find there's not enough sauce, just add a spash of tomato or soy sauce.

Just in time for summer, I hope you enjoy this as much as I do!

The Mother of ALL Marinades
Ingredients

  • 1/4 cup hoisin sauce
  • 1/2 cup tomato sauce
  • 1/4 cup light soy sauce
  • 1/4 cup honey
  • 1 tbsp salt
  • 1 tspn ground black pepper
  • 1/4 - 1/2 cup chilli sauce
  • 1 tspn dried chilli flakes
  • 2 tspn ground all spice

Method

  1. Mix dry ingredients in a large bowl. Add sauces and mix thoroughly using a whisk if necessary. Have a taste - if you want more heat, add more chilli sauce. I wouldn't add any more chilli flakes as this has hidden heat that won't be released until cooked. And don't be surprised if the sauce is quite salty at this stage - it needs to be in order to sufficiently season the meat.
  2. Pour the liquid gold over the meat. Use your hands to rub the sticky sauce onto all exposed flesh
  3. Leave to marinade overnight or 4 hours at a minimum.
  4. To reduce cooking time, pull out the marinade mix from the fridge 30 mins before required cooking time.
  5. Meat can be cooked on the grill, but for best results, roast (covered with aluminimium foil) in a moderate oven (180c) for 45 mins. Whip off the foil, crank up the heat, then continue to roast for 10-15 minutes until golden.

YUM!!!
